  • Emulsion Stability: Oil and water want to separate. The right blend keeps them bound for a dressing, a mayonnaise, a sauce, or a plant-based milk that pours smooth every time.
  • Suspension: Cocoa, fibers, vitamins, and fruit pulp tend to sink. A stabilizer holds them evenly through the product, so the last pour matches the first.
